A personal journey. A passion for plant-based living.
Sharing what I’ve learned along the way.
My Plant-Based Journey
I was always interested in health and nutrition and thought I ate a healthy diet. That changed in my 50s, when I began experiencing recurring kidney issues that would not go away. The antibiotics I was taking were not helping, and I was concerned about relying on medication and its possible side effects.
Around that time, I saw Dr. Joel Fuhrman discussing nutrition on The Dr. Oz Show. His message made me curious about the role food might play in health, so I immediately read his book Eat to Live and began following the recipes and dietary approach in the book.
Within about two weeks, I experienced a remarkable improvement in my symptoms, and I have continued eating a whole-food, plant-based diet ever since. That was my personal experience, and it sparked a question that changed the direction of my life: Why hadn’t I learned more about the connection between nutrition and health sooner?
I became determined to learn as much as I could. I watched documentaries and explored the work of leading voices in plant-based nutrition including Dr. T. Colin Campbell, Dr. Neal Barnard, Dr. John McDougall, Dr. Michael Greger, Dr. Caldwell Esselstyn and Dr. Joel Fuhrman. The more I learned, the more passionate I became about sharing practical, evidence-based information about whole-food, plant-based eating.
To deepen my knowledge, I earned a certificate in plant-based nutrition through the six-week program offered by the T. Colin Campbell Center for Nutrition Studies and eCornell. I also studied health coaching and mentoring and completed a professional plant-based cooking program through Rouxbe.
Plant-Based Digest grew out of that journey. My goal is to make plant-based eating approachable—not complicated or overwhelming—by sharing practical information, simple recipes and resources that can help people add more whole plant foods to their lives.
